Dreaming in Chocolate

Last night I wanted chocolate, which is strange since I usually crave potato chips. With time on my hands and a little intent I played with the a low butter chocolate cake recipe and a basic icing recipe and came up with the following "tweaked"  recipes that satisfied my craving - Enjoy!


CHOCOLATE CUPCAKES with LIME YOGURT ICING
Makes 12 Large Cupcakes

Preheat Oven to 350 F and place liners into muffin pan

1 1/3 C Flour
1/4 T Baking Soda
2 T Baking Powder
3/4 C Unsweetened Cocoa Powder
(I mixed 1/2 C Hershey's Special Dark Cocoa Powder + 1/4 C Cocoa Powder)
1/8 T Salt
3 TBS Butter, softened
1 C Light Brown Suger
1/2 C Sugar
2 Large Eggs
1 T Vanilla
1 C 2% Milk

Sift flour, baking powder and soda, cocoa and salt into a medium sized bowl - set aside
In large separate bowl cream butter and sugars until fluffy
Continue to beat, adding one egg at a time, followed by vanilla
Beat at fairly high speed to add "air"
Alternatively add flour and milk to creamed butter mixture until a fairly thin light batter forms.
Fill muffin cups 3/4 way up
Lick beaters and bowl
Bake for 15 minutes or so
Use toothpick to test if cake is set, toothpick should come out dry.
Remove cupcakes from pan and allow to cool for about 45 minutes before icing.

LIME YOGURT ICING

2 C Powdered Sugar
2 TBS Plain Low Fat Yogurt
Zest and Juice of 1/2 Lime

Place powdered sugar in bowl, add yogurt and lime zest and juice. Beat well until icing forms. May need to add more sugar or lime juice depending on how thick or thin you like the icing. I prefer icing as a glaze rather than a topping.
